Month of Vegetarianism – Day 2

Day 2 of my Month of Vegetarianism went by without me so much as noticing, mostly because i sat at home all day without eating. North Texas is covered in ice, and i chose to not go into work, but instead made a logo for my Fantasy Baseball team, The Osaka Sunrise. It took 3 hours.

In the morning, I woke up and took a shower like usual, but ended up going back to bed shortly thereafter. When i finally rose from bed, i had some Apple & Cinnamon Oatmeal and two cups of straight black coffee. Later, I had some Tostitos “Hint of Lime” chips…good stuff. For dinner, i sauteed some slices of Red Potato in a pan with garlic, soy sauce, and oil. Then, I threw some Great Northern Beans, Carrots, and White Rice into a pot and boiled ’em.

The potatoes were GREAT. I seasoned ’em with salt and pepper, and ate ’em right up.

The “pot of boiling stuff” was absolutely horrible. Apparently, one should let beans soak in water before doing anything with them. Note to self: Learn to cook beans before cooking beans. I was just sittin’ there, crunching on still-pretty-hard beans, wondering what the hell i’d done wrong. The carrots and rice were great, but the beans totally ruined it. I finished what i’d originally put on my plate, and threw the rest away. FAIL. Lesson: Learned.

Later in the night, i had more chips and assorted cookies, but still no meat. So far, i haven’t really missed it, but who knows what the future will bring…

    Yeah, I guess it’s not hard to be a “vegetarian” (vegetables) when you eat chips and cookies all day. LOL

  3. Go canned if you don’t want to wait the hours it takes to soak and cook raw beans.
